Oatmeal Toasting & Sandwich Bread

Directions

Combine all ingredients in the mixing bowl of a stand type electric mixer with a bread hook.

Knead for 5 minues until dough is smooth. (If by hand knead for 10 minutes)

Place dough in a lightly greased bowl and turn over. Cover and allow to rise for 1 hour. It will become quite puffy although it may not double in bulk.

Transfer the dough to a lightly oiled surface and shape it into a log. Place the log in a lightly greased 9 x 5 inch loaf pan, cover the pan with a clean dish towel and allow the dough to rise for 45 minutes or 1 hour until it's crested 1 to 2 inches over the rim of the pan.

Bake the bread in a preheated 350° F. oven for 35 to 40 minues until the center reads 190° F. with an instant read therometer. If the bread appears to be browning to rapidly, tent with aluminum foil for the last 10 minutes.
